Homemade pita is surprisingly easy. There's a great guide here. I was able to make the pita puff with 100% white whole wheat flour by allowing it to rise slightly longer and rolling it out very thin. Fantastic results. I rolled out three rounds and froze them, too, but I haven't tried to see if they'll bake correctly yet.
